1/4tspcayenne
3/4cuppinto beans
3/4cupcorn
12ozsalsa
4oztortilla chips
1cupMexican cheese blend

    Sweat the aromatics

    Warm the olive oil in a large skillet over medium heat. Finely chop the onion and dice the jalapeno (seeds removed for a milder dish), add them to the pan, and saute for 2 to 3 minutes until softened.

    Brown the turkey

    Add the ground turkey and season with salt and pepper. Cook, crumbling the meat into small pieces, until browned and cooked through.

    Build the filling

    Stir in the chili powder, smoked paprika, cumin, cayenne, drained pinto beans, corn, and salsa. Mix well and let it cook for about 3 minutes to bring the flavors together.

    Top and melt

    Lightly crumble the tortilla chips over the turkey, then sprinkle the shredded Mexican cheese over the chips. Cover with a lid and cook 1 to 2 minutes until the cheese melts, or run it under the broiler for 2 to 3 minutes.

    Finish and serve

    Remove from the heat, scatter chopped cilantro over the top, and serve with lime wedges. Add avocado, guacamole, or a spoon of Greek yogurt if you want.
