Brown the turkey
Preheat oven to 350°F. In a large cast-iron or other ovenproof skillet, cook the ground turkey over medium heat until no longer pink, breaking it up as it cooks. Drain and set the turkey aside.

Saute the vegetables
In the same skillet, heat the canola oil and saute the chopped zucchini and chopped red bell pepper until crisp-tender, about 2 minutes.

Combine and bake
Stir in the turkey, cooked rice, drained black beans, stewed tomatoes, tomato sauce, cumin, salt and pepper. Cover and bake for 30 minutes.

Finish and serve
Sprinkle with the shredded Mexican cheese blend and let stand 5 minutes before serving. Top with chopped avocado if you want a little healthy fat.

- 2 cup rice
- 15 oz black beans
- 14 1/2 oz Mexican stewed tomatoes
- 8 oz tomato sauce
- 1/2 tsp ground cumin
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 cup reduced-fat Mexican cheese blend
