Make the filling
Preheat air fryer to 375°F. In a small bowl, mix cream cheese, shredded cheddar, and finely chopped and seeded jalapeno until combined. Cut a horizontal pocket in the thickest part of each chicken breast. Fill each pocket with the cheese mixture. Sprinkle chicken with salt and pepper. Wrap 2 bacon strips around each breast and secure with toothpicks.

Air fry
Working in batches if needed, place chicken seam side down on a greased tray in the air fryer basket. Cook at 375°F until a thermometer inserted into the thickest part reads 165°F, 14–16 minutes, turning once halfway through. Let stand 5 minutes. Remove and discard toothpicks before serving.
