    Cook the turkey and vegetables

    Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey, zucchini (quartered lengthwise and cut into 1/2-inch slices), chopped onion, seeded and chopped banana peppers, minced garlic, and dried oregano. Cook for 10-12 minutes, breaking the turkey into crumbles, until the turkey is no longer pink and the vegetables are tender. Drain any excess grease.

    Finish and serve

    Stir in the black beans, diced tomatoes (with liquid), balsamic vinegar, and salt. Cook until heated through, stirring occasionally, about 3-5 minutes.
