Make the slaw sauce
In a small bowl, combine sour cream, mayonnaise, cilantro (minced), green onions (chopped), lime juice, jalapeño (finely chopped and seeded), garlic (minced), and 1/4 tsp salt. Stir until smooth. In a large bowl, toss the shredded cabbage with 1/2 cup of the sour cream mixture. Set the remaining sauce aside for serving.

Cook the shrimp
Heat canola oil in a large skillet over medium heat. Add the shrimp along with chili powder, 1/2 tsp salt, cumin, onion powder, garlic powder, and cayenne pepper. Cook, stirring often, until shrimp turn pink, about 4–6 minutes. Remove from heat immediately — overcooked shrimp get rubbery fast.

Top each tortilla with a spoonful of the dressed cabbage slaw, a few seasoned shrimp, a dollop of the reserved sour cream sauce, and crumbled Cotija cheese. Add avocado slices if you want. Serve with lime wedges on the side.
