Make the sauce
Preheat the air fryer to 350°F. In a small bowl, stir together the sweet chili sauce, lime juice, ketchup, and soy sauce. Set aside 1/2 cup of this mixture for serving.
- 2
Mix the meatballs
In a large bowl, combine the lightly beaten egg, panko, finely chopped green onion, minced cilantro, salt, garlic powder, and the remaining 4 tablespoons of the chili sauce mixture. Add the ground chicken and mix lightly but thoroughly so you don't overwork it. Shape into 12 meatballs.
- 3
Cook
Working in batches, arrange the meatballs in a single layer on a greased tray in the air-fryer basket. Cook 4-5 minutes until lightly browned, then turn and cook another 4-5 minutes until browned and cooked through (165°F internal). A convection or toaster oven works too.
- 4
Serve
Serve the meatballs with the reserved sauce for dipping and a sprinkle of extra cilantro.
