Preheat the oven
Preheat oven to 350°F. Fit a 15x10x1-inch rimmed baking sheet with a wire rack and coat the rack with cooking spray.

Sauté the spinach and garlic
Heat olive oil in a small skillet over medium-low heat. Add the chopped spinach and minced garlic; cook until the spinach wilts and garlic is fragrant, 1-2 minutes. Remove from heat and let cool slightly.
