1lbground turkey
1/3cupwhole wheat panko bread crumbs
1large egg
1tbspfresh parsley

    Preheat the oven

    Preheat oven to 350°F. Fit a 15x10x1-inch rimmed baking sheet with a wire rack and coat the rack with cooking spray.

    Sauté the spinach and garlic

    Heat olive oil in a small skillet over medium-low heat. Add the chopped spinach and minced garlic; cook until the spinach wilts and garlic is fragrant, 1-2 minutes. Remove from heat and let cool slightly.

    Mix and shape the meatballs

    In a large bowl, combine the spinach mixture, ground turkey, crumbled feta, panko bread crumbs, beaten egg, minced parsley, salt, basil and pepper. Mix until just combined. Shape into 1½-inch balls and arrange on the prepared wire rack, spacing about 1 inch apart.

    Bake

    Bake for 25-30 minutes or until the internal temperature reaches 165°F. Let cool slightly before serving. Serve with tzatziki, hummus, or a simple yogurt-herb dip.
