Season and sauté
Cut the chicken into 1/2-inch strips and sprinkle with the garlic seasoning blend. Heat the olive oil in a large cast-iron or heavy skillet over medium-high heat. Add the chicken and chopped onion and sauté until the chicken is no longer pink, about 5-6 minutes. Add the minced garlic and cook 1 minute more.

Add everything else and simmer
Stir in the diced tomatoes (with their liquid), thawed and squeezed-dry spinach, chicken broth, orzo, and Italian seasoning. Add the red pepper flakes if you want some heat. Bring to a boil, then reduce heat, cover, and simmer until the orzo is tender and the liquid is absorbed, 15-20 minutes. Sprinkle with Parmesan if you like.

- 1 garlic clove
- 14 1/2 oz diced tomatoes
- 10 oz frozen chopped spinach
- 1 cup reduced-sodium chicken broth
- 3/4 cup orzo pasta
- 1 tsp Italian seasoning
- 1/8 tsp crushed red pepper flakes
- 1/4 cup Parmesan cheese
