Sear the kielbasa
Heat a 12-inch skillet over medium-high for 2 minutes. Slice the kielbasa into rounds on a bias. Add oil to the hot pan and swirl to coat. Add sausage in a single layer — don't crowd it or it'll steam instead of sear. Let it go 2-3 minutes until well browned on the bottom, then flip each piece. Sear the other side 2 more minutes. Remove all the sausage to a plate.

Build the base
Add 2 tablespoons of butter to the same pan. While it melts, scrape up the browned sausage bits — that's flavor, don't leave it. Add the diced onion, bay leaves, smoked paprika, caraway seeds, and peppercorns. Sauté 3 minutes, stirring occasionally.

Add the cabbage
Add the remaining 2 tablespoons of butter, then pile in the chopped cabbage. Sprinkle with 1½ teaspoons kosher salt. Sauté about 5 minutes, stirring occasionally, until the cabbage is wilted but still has a little life in it. Add the minced garlic and cook 1 more minute.

Finish and serve
Add the apple cider vinegar and whole grain mustard and stir them in. Return all the seared sausage to the pan, including any juices on the plate. Stir everything together and cook 1 more minute until the sausage is heated through. Remove bay leaves. Serve hot.
