Instructions
  1. 1

    Build the boil

Fill a large stockpot with the water and beer. Add 4 tablespoons of the Old Bay, the onion cut into big chunks, the bay leaves, and the peeled garlic. Cut 2 of the lemons in half, squeeze them into the pot, then drop the spent halves in too. Bring it to a rolling boil over medium-high heat. The beer is optional flavor insurance - swap in more water if you'd rather skip it, the boil still works.

  1. 2

    Potatoes go first

Add the halved red potatoes and boil 8 to 10 minutes, until a fork slides in but they aren't falling apart. They take the longest of anything in the pot, so they get a head start.

  2. 3

    Then sausage and corn

Add the smoked sausage cut into 1-inch pieces and the corn, shucked and broken into about 4 pieces each. Boil 6 minutes.

  3. 4

    Shrimp last

Add the shrimp and cook just 4 to 5 minutes, until they turn pink and curl. Don't wander off here - shrimp go from perfect to rubbery in about a minute.

  4. 5

    Drain and dump

Pull the pot off the heat and drain everything through a colander, or scoop it out with a slotted spoon. Dump it all onto a big rimmed sheet pan, or straight onto a newspaper-covered table if you're feeling it.

  5. 6

    Butter it up

Melt the butter and whisk in the parsley and the last tablespoon of Old Bay. Drizzle half of it over the pile and toss gently to coat.

  6. 7

    Serve

Cut the last 2 lemons into wedges and serve alongside with the remaining butter for dipping. Hot sauce on the side if that's your thing.
