Brown the beef
In a large skillet over medium heat, cook 1 pound ground beef until no longer pink, breaking it up as it goes. Drain off the grease so the dish doesn't turn out greasy.

Build the sauce
Right in the same skillet, add 1-3/4 cups water, 2/3 cup barbecue sauce, 1 tablespoon prepared mustard, 2 teaspoons dried minced onion, and 1/2 teaspoon pepper. Bring it to a boil.

Add the rice and cheese
Stir in 2 cups uncooked instant rice, then sprinkle 1 cup shredded cheddar over the top. Reduce the heat, cover, and simmer 5 minutes until the rice is tender and the cheese has melted in.

Top and serve
Scatter 1/3 cup chopped dill pickles and 5 strips of cooked, crumbled bacon over the top. Add these at the very end so they stay crunchy instead of going soggy.
