Heat the oven
Heat the oven to 425°F. Grease a large sheet pan with the butter, spreading it all the way to the edges so nothing sticks.
- 2
Prep the add-ins
Seed and slice the bell peppers, slice the half red onion, and cut the kielbasa into 1/2-inch coins (or use pre-cut kielbasa bites).
- 3
Load the pan
Spread the frozen pierogies, peppers, onion, and kielbasa in a single even layer on the sheet pan. Don't crowd them — you want room for things to brown, not steam.

Roast
Bake 20 to 25 minutes, until the pierogies are golden and the peppers and onions are soft. Stir and flip the pierogies about halfway through so both sides crisp up.

Serve
Scoop everything onto a platter and scatter chopped chives over the top if you've got them.
