Brown the chops
Set a large nonstick skillet over medium heat and brown the pork chops on both sides, about 4 minutes total. Don't cook them through — you just want color. Pull them out and set them on a plate.

Build the apple and onion layer
In the same skillet (don't you dare wash it — that browned stuff is flavor), combine the apples cut into wedges, the onion cut into thin wedges, and the water. Set the chops right on top of the apple mixture and drizzle them with the vinaigrette. Sprinkle with the salt and pepper.

Cover and simmer
Reduce the heat, cover, and simmer until a thermometer in the thickest chop reads 145°F, about 3-5 minutes. That's it. Let the chops rest a couple minutes before serving so they stay juicy. Spoon the pan juices over everything.
