Dry shake
Add the amaretto, bourbon, freshly squeezed lemon juice, simple syrup, and egg white to a cocktail shaker with no ice. Shake hard for about 30 seconds to whip the egg white into that signature frothy top.

Shake with ice
Fill the shaker with ice and shake again until it's ice cold and frosty on the outside, roughly 15 seconds.

Strain and serve
Strain into a rocks glass over fresh ice. Drop in a maraschino cherry and a twist of lemon, and you're done.

Notes & Tips
The trick here is the bourbon and fresh lemon. Old-school amaretto sours leaned on sour mix and came out cloying sweet. A little bourbon cuts the almond sweetness and the fresh lemon keeps it bright, so you get nutty, tart, and smooth all at once. The egg white is optional but it gives you that gorgeous foam cap and a silkier sip, so I'd keep it. Mocktail swap: skip the amaretto and bourbon, and build it with 2 oz of cold water plus a splash of almond (orgeat) syrup and a few drops of almond extract, then the same lemon, simple syrup, and egg white. Shake the same way and you've got a booze-free sour that still fools people.
