Make the apple cider syrup
Bring the apple cider to a boil in a large saucepan over medium-high heat, then drop the heat and let it simmer uncovered until it cooks down to about 2 cups, roughly 3 hours. Skim off any foam and solids as it goes. Let it cool, then chill it in the fridge. It takes a while, but it's totally hands-off and makes enough syrup for a whole run of drinks.

Rim the glass
Rub a lemon wedge around the rim of a cocktail glass, then dip the rim in cinnamon sugar spread on a small plate. Fill the glass with ice and set it aside.

Shake it up
In a cocktail shaker, combine the tequila, lemon juice, triple sec, 1 ounce of your chilled apple cider syrup, and a dash of Angostura bitters. Fill with ice, cap it, and shake hard for 15 to 20 seconds until the shaker frosts over.

Pour and garnish
Strain into your prepared glass and garnish with a lemon wedge. That's fall in a glass.
