Build the base
Grab your biggest pitcher and pour in the white wine (a crisp, dry sauvignon blanc or pinot grigio is perfect here) and the apple cider. Chop the apples into bite-size chunks and add them along with the pomegranate seeds, brandy, orange juice and cinnamon sticks. Give it a good stir with a long spoon.

Let it chill
Cover the pitcher and stash it in the fridge for about 2 hours, stirring once or twice along the way. This is the part where the flavors get friendly and everything melds together, so don't skip it.

Top and serve
Fish out the cinnamon sticks and toss them. Right before serving, pour in the chilled ginger beer for that bubbly, gingery kick and give it one last stir. Pour over ice into stemless wine glasses and make sure everybody gets some of the fruit in their glass.
