    Make the honey syrup

    Bring the water and honey to a boil in a small saucepan over medium-high heat. Reduce the heat and simmer until reduced down to about 1/4 cup, a few minutes. Pour into a small container and refrigerate until cold — you'll only need half of it tonight, the rest keeps for weeks.

    Shake it up

    Fill a cocktail shaker half full with ice. Add the gin, lemon juice, and 1/2 ounce of the chilled honey syrup. Cover tightly and shake hard for 15-20 seconds, until the outside of the shaker frosts over.

    Strain and garnish

    Strain into a coupe or other stemmed cocktail glass. Twist a strip of lemon peel over the top to release the oils, drop it in, and serve right away.
