    Prep the limes

    Slice about 1/4 inch off both ends of each lime, then cut each in half lengthwise and again into quarters. Hold each quarter skin-side down and slice out that white pith running down the center. That bitter core is the #1 reason a caipirinha turns out harsh, so don't skip it. Cut each pith-free quarter crosswise so you end up with roughly 8 little wedges per lime.

    Muddle

    Drop the lime wedges flesh-side up into a rocks glass and add the sugar. Muddle just until the limes give up their juice and the sugar starts to dissolve. Go easy here. Grind it to a pulp and you'll drag out the bitter oils in the peel.

    Build and serve

    Pack the glass with crushed ice, pour the cachaça over the top, and give it a quick stir. Serve as is, ideally with a stir stick so everyone can mix their own. Fresh is best, so make these to order rather than in advance.
