Make the honey syrup
Whisk together 1 tablespoon honey and 1 tablespoon warm water until the honey fully dissolves. That's your honey simple syrup — it plays nicer with gin than plain sugar syrup.

Shake it cold
Add the gin, freshly squeezed lime juice, and honey syrup to a shaker with a big handful of ice. Cover and shake hard for about 15 seconds, until the tin is frosty.

Strain and serve
Strain into a chilled coupe. Garnish with a lime wheel and taste — if you went heavy on the lime, add another splash of honey syrup to balance it out.
