Dry shake first
Add the gin, freshly squeezed lemon juice, simple syrup, and egg white to a shaker — no ice yet. Cover and shake hard for a full 15 seconds. That dry shake is what whips the egg white into that gorgeous cloud of foam on top, so don't skip it.

Toss ice into the shaker, cover, and shake again until it's frosty cold on the outside. No shaker? Any jar with a tight lid does the job.

Strain into a chilled highball glass. If you've got a fine mesh strainer, run it through that too — it catches any stray bits of egg white and keeps the pour silky.
