Load the shaker
Add the gin, mint leaves, simple syrup, lime juice, and 3 drops of aromatic bitters (optional) to a cocktail shaker. Fill it with ice.

Shake it hard
Shake until the outside of the shaker feels frosty and the mint gets a little bruised, about 15 seconds. That bruising is what releases the mint oils into the drink.

Strain and serve
Strain into a glass over a few fresh ice cubes (or straight up into a chilled coupe). Garnish with a mint sprig and drink it cold.

Notes & Tips
Think of the Southside as a gin mojito that got dressed up — same mint-and-lime brightness, but strained clean so there's nothing to chew on. The ratio to remember is 2 : 0.75 : 0.75 (gin, syrup, lime), and don't skip fresh lime juice; the bottled stuff will flatten it. Mocktail swap: drop the gin, add a splash of soda water, and bump the lime and mint a touch — you've basically got a mint limeade fizz that tastes like summer. Weekend-approved either way.
