Muddle the mint
Drop 8 fresh mint leaves and the simple syrup into the bottom of a julep cup or rocks glass. Muddle gently, just a few presses to bruise the leaves and wake up the oils. Don't grind it to a paste or you'll pull out bitter flavors.

Pack the ice
Fill the cup all the way with crushed ice. If you don't have crushed ice, wrap cubes in a clean towel and whack them a few times with a rolling pin. Crushed is non-negotiable here, it's what makes a julep a julep.

Add the bourbon and stir
Pour the bourbon over the ice and stir for a good 15 to 20 seconds, until the outside of the cup frosts over. Top off with a little more crushed ice to build a dome.

Garnish and serve
Give the remaining mint sprig a sharp slap between your palms to release the aroma, then plant it in the ice next to a short straw. Sip slow.
