    Dry shake the foam

    Add 2 oz bourbon, 1/2 oz freshly squeezed lemon juice, 1/2 oz simple syrup, and the egg white to a shaker with NO ice. Shake hard for about 15 seconds. This dry shake whips the egg white into the silky foam that makes a whiskey sour look as good as it tastes. Skipping the egg white? No problem, just bump the lemon and simple syrup to 3/4 oz each to keep the volume right.

    Shake with ice

    Fill the shaker about three-fourths full with ice, cover, and shake again until the outside frosts up, another 10 to 15 seconds. You want it cold and properly diluted.

    Strain and garnish

    Strain into a chilled rocks glass over fresh ice (or serve it up, your call). Garnish with an orange wedge and a maraschino cherry, and drink it while that foam is still sitting pretty on top.
