    Shake it

    Fill a cocktail shaker half full with ice. Add the gin, freshly squeezed lemon juice, and simple syrup. Cover and shake hard for about 10 seconds, until condensation forms on the outside. Don't over-shake — you want it cold and slightly diluted, not watery.

    Pour and top

    Strain into a champagne flute. Top with chilled champagne (or prosecco, cava — whatever bubbly you've got). Garnish with a lemon peel twist.
