Make quick honey syrup
Stir the honey with about a teaspoon of hot water until it loosens into a smooth, pourable syrup. Let it cool for a second so it doesn't melt your ice on contact.

Shake it cold
Add the bourbon, freshly squeezed lemon juice, and honey syrup to a shaker filled with ice. Shake hard for 10-15 seconds until the outside of the shaker frosts up.

Strain and serve
Strain into a rocks glass over one big ice cube, or serve it up in a coupe. Twist a strip of lemon peel over the top and drop it in.

Notes & Tips
Three ingredients, and the whole thing lives or dies on balance: 2 parts bourbon, 3/4 lemon, 3/4 honey syrup. It's basically a whiskey sour that swapped simple syrup for honey, and honestly it's the upgrade. Use a honey you actually like tasting, since it's front and center. Mocktail swap: skip the bourbon and build it with 2 oz cold strong black tea (or a zero-proof whiskey) plus the same honey and lemon, then top with a splash of soda water. Still balanced, still gold, still worth pouring.
