    Wake up the mint

    Place the mint leaves in one palm and give them a quick smack with the other hand. This bruises the leaves just enough to release the oils — that's where all the herbal flavor lives. Drop them into a large wine glass or rocks glass.

    Build the base

    Fill the glass with ice, then pour in 1 1/2 oz elderflower liqueur (St-Germain is the gold standard). Give it a quick stir to wake up the mint and let everything get acquainted with the ice.

    Top with bubbles

    Pour in 3 oz prosecco, then top with 2 oz soda water. Don't stir hard — you want to keep the carbonation alive. A gentle lift with a bar spoon is plenty.

    Garnish and serve

    Slide a lime slice onto the rim or float it on top. Serve immediately while it's still ice-cold and bubbly.
