Load the shaker
Add the bourbon, freshly squeezed lemon juice, maple syrup, and 3 dashes of Angostura bitters to a cocktail shaker. If you want that classic silky foam on top, crack in one egg white too. Skip it if you'd rather keep things simple.

Dry shake, then shake with ice
If you added the egg white, shake hard with no ice for about 20 seconds first. This whips up the foam. Then add a handful of ice and shake another 20 seconds until the shaker is frosty. No egg white? Just shake once with ice until cold, about 15 seconds.

Strain and garnish
Strain into a rocks glass. If you foamed it with egg white, serve it neat so the foam sits pretty on top. If you skipped the foam, pour it over one big ice cube. Garnish with a thin lemon slice and a couple extra drops of bitters right on top of the foam.
