Build the glass
Fill a highball glass about two-thirds full with ice, then pour in the blanco tequila. Cold glass, lots of ice, this one lives or dies on being ice cold.

Squeeze in the juice of half a fresh lime, about 1 ounce. Fresh only here, no bottled stuff, it's a three-ingredient drink so every one counts.

Top with chilled sparkling mineral water, Topo Chico if you can get it, and give it one quick stir. Garnish with a lime slice and drink it cold.

This is the easiest good drink you'll make all summer, tequila, lime, and bubbles, that's it. No syrup, no sugar, nothing sticky, just crisp and refreshing. The mineral water matters more than you'd think, Topo Chico gives it that salty, earthy fizz Texans swear by, but any good sparkling mineral water works. Want it fancier? Run a lime around the rim and dip it in kosher salt or Tajin. Splash of grapefruit juice turns it into a ranch-water-paloma hybrid. Mocktail swap: skip the tequila, fill the glass with sparkling mineral water, double the lime, and add a tiny pinch of salt, still ridiculously refreshing.
