Notes & Tips
Don't skip the egg white, it's not there for flavor, it's what gives the Clover Club that creamy foam cap and velvety texture. If raw egg isn't your thing, swap in an ounce of aquafaba (the liquid from a can of chickpeas); it foams up just as well. No raspberry syrup around? Muddle a handful of fresh raspberries with a little simple syrup and strain. Mocktail version: skip the gin, bump the lemon to 3/4 oz, keep the egg white (or aquafaba) and raspberry syrup, and top with a splash of soda for a pink raspberry fizz that still looks the part.
