Cook the noodles
Break the vermicelli in half and cook according to the package directions. Drain and set aside. If you swap in rice vermicelli (bihon) for a more traditional take, most only need a soak — check the package.

Stir-fry the pork
Cut the pork chops into thin strips. In a bowl, toss the pork with 2 tablespoons of the oil, the minced garlic and 1/2 teaspoon salt. Place a large skillet over medium-high heat, add half the pork mixture and stir-fry 2-3 minutes until browned. Remove and repeat with the remaining pork — two batches means it caramelizes instead of steaming.

Stir-fry the vegetables
In the same skillet, heat the remaining tablespoon of oil over medium-high heat. Add the onion, halved and thinly sliced, and stir-fry 1-2 minutes until tender. Add the shredded cabbage, julienned carrot and snow peas; stir-fry 3-5 minutes until crisp-tender.

Bring it together
Stir in the pepper and remaining 1 teaspoon salt. Return the pork to the pan, add the noodles and toss everything until heated through. A tablespoon or two of soy sauce stirred in here deepens the savory side beautifully.
