    Preheat and toast the pecans

    Preheat the oven to 350°F. Coarsely chop the 2 cups pecans, then spread them on a dry baking sheet and pop them in the oven while it finishes heating. Toast for 7 to 10 minutes, stirring every couple of minutes, until they smell warm and nutty. Toasting is technically optional, but it's a 5-minute step that pulls out a ton of flavor — your filling will taste like real, deep pecan pie instead of just sweet.

    Line your pan and start the shortbread

    Line a 9x13-inch baking pan with parchment paper, leaving a couple of inches of overhang on the long sides so you can lift the whole slab out later. In a large bowl or stand mixer, beat 1 cup of softened butter (set the other 1/2 cup aside for the filling) on medium-high for 2 to 3 minutes, scraping the sides as you go. You want it pale and fluffy — this is the air that makes shortbread tender.

    Add sugars, vanilla, salt, and flour

    Add 1/2 cup of the granulated sugar and 1/3 cup of the brown sugar (set the rest aside for the filling). Beat until smooth and creamy. Mix in 1 1/2 teaspoons of the vanilla and 3/4 teaspoon of the kosher salt. Add all 2 cups of flour and beat just until the flour disappears. It'll feel like too much at first, but it comes together — don't keep mixing past that point or your crust will turn out tough instead of crumbly.

    Press and bake the crust

    Wet your hands lightly and press the dough evenly into the lined pan, all the way to the edges. No fancy edge — just flat. Bake at 350°F for 18 to 20 minutes, until the edges are lightly golden. Pull it out and set it aside while you make the filling. The crust can still be warm when you pour the filling on — that's fine.

    Brown the butter

    In a small saucepan over medium heat, melt the remaining 1/2 cup butter. Don't walk away — once it foams, swirl the pan and watch for golden-brown specks on the bottom and a nutty, caramel aroma. That's brown butter, and it goes from perfect to burned in seconds. As soon as you see brown bits and smell that toasty smell, take it off the heat and set it aside to cool for a few minutes.

    Whip the eggs and mix the filling

    In the same bowl (no need to wash it), beat the 3 eggs on medium for about 3 minutes, until they lighten in color — you're whipping a little air in for a softer, less dense filling. Add the remaining 1/4 cup granulated sugar, the remaining 1 cup brown sugar, the 1/2 cup light corn syrup, and the 1 tablespoon milk. Beat until smooth. Stream in the slightly cooled brown butter while the mixer is running so the eggs don't curdle. Add the remaining 1 1/2 teaspoons vanilla, the remaining 1/2 teaspoon kosher salt, the 1 1/2 teaspoons lemon juice, and 1 tablespoon flour (scooped from the bag — it's just a thickener). Beat smooth. Fold in the toasted pecans and 1/2 cup toffee bits with a spatula. The lemon juice is the secret — you won't taste it, but it sharpens the caramel and keeps the filling from being one-note sweet.

    Pour, bake, and check for doneness

    Pour the filling evenly over the warm crust and spread it out so the pecans cover the surface. Bake at 350°F for 30 to 35 minutes. You're looking for lightly browned edges and a center that wiggles just a little when you shake the pan — not sloshy, just a gentle jiggle. The filling will continue setting as it cools, so pulling it a hair early is way better than overbaking.

    Cool completely, then slice

    Let the bars cool all the way to room temperature in the pan. I know, I know — but cutting them warm means a gooey mess instead of clean squares. Once cool, lift the parchment out, set the slab on a cutting board, and slice into 12 bars with a sharp knife (wipe it between cuts for tidy edges). Serve as-is, or warm a square in the microwave for 10 seconds and top with vanilla ice cream and a drizzle of salted caramel for the full experience.
