Brown the beef
Preheat the oven to 350F. In a large skillet, cook the ground beef over medium heat until no longer pink, breaking it into crumbles as it cooks. Drain off the excess grease.

Build the sauce
Stir the enchilada sauce and salsa into the beef. Add the black beans (drained and rinsed) and stir to combine. The mixture should be saucy but not soupy. Set aside.

Layer the casserole
Grease a 13x9-inch baking dish. Place 2 tortillas in the bottom, overlapping as needed. Cover with a third of the meat mixture, then 1 cup corn and about 1 1/3 cups shredded cheddar. Repeat the layers once. Finish with the remaining tortillas, meat, and cheese on top.

Bake uncovered for 30 minutes, or until the casserole is bubbly and the cheese is fully melted. Let it rest 5 to 10 minutes before slicing into 8 pieces. Garnish with diced tomatoes, sliced jalapenos, or a dollop of sour cream if you like.

- 6 flour tortillas
- 2 cup corn
- 4 cup cheddar cheese
