Brown the sausage
Heat the olive oil in a large pot over medium heat. Add the sliced smoked sausage (linguica or chourico if you can find it) and cook about 3 minutes, until browned and the fat renders out.

Soften the aromatics
Add the diced onion and cook 3 minutes, until softened. Stir in the minced garlic and saute 30 seconds to 1 minute, until fragrant.

Simmer the potatoes
Add the chicken broth, the peeled and diced potatoes, salt, and pepper. Bring to a boil, then cover and simmer until the potatoes are fork-tender, about 15 minutes.

Add kale and beans
Stir in the drained and rinsed kidney beans and the finely chopped kale. Simmer 3 to 5 minutes, just until the kale wilts down.

Season and serve
Taste and adjust the salt and pepper. For a traditional bright finish, drizzle a little apple cider vinegar into each bowl, or stir a splash into the whole pot.
