    Make ham stock

    In a Dutch oven or large pot, combine the ham bone and 6 cups of water. Bring to a boil, then reduce heat, cover, and simmer for 1½ hours. Remove the ham bone and set it aside to cool slightly.

    Add lentils and vegetables

    To the broth in the pot, add the lentils, diced tomatoes with their liquid, sliced carrots, sliced celery, chopped green onions, salt, garlic powder, oregano, and pepper. Bring to a boil, then reduce heat, cover, and simmer until lentils and vegetables are tender, 30 to 40 minutes.

    Brown the sausage

    While the lentils simmer, cook the bulk pork sausage in a skillet over medium heat, crumbling as it cooks, until browned and cooked through. Drain excess fat and set aside.

    Finish the soup

    Pull the ham meat off the bone and coarsely chop it. Add the chopped ham, cooked sausage, and chopped parsley to the pot. Stir to combine and simmer for a few minutes until everything is heated through.
