    Soften the onion

    Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the finely chopped onion and cook for about 5 minutes, stirring often, until softened and translucent.

    Bloom the spices

    Add the minced garlic, minced ginger, curry powder, ground coriander, cumin, paprika, cinnamon, salt, and black pepper. Stir and cook for 1 minute until fragrant.

    Build the curry

    Peel the sweet potatoes and cut into 3/4-inch chunks. Add them to the pot along with the drained chickpeas, diced tomatoes, tomato paste, and coconut milk. Stir to combine.

    Simmer

    Bring to a gentle bubble, then reduce heat and simmer, stirring occasionally, for 20-30 minutes until the sweet potato is fork-tender. Add a splash of water or vegetable stock if the sauce gets too thick.

    Finish with spinach

    Stir in the baby spinach and let it wilt, about 1 minute, then turn off the heat. Serve over rice or with naan.
