Brown the sausage
Dice the smoked kielbasa. In a large pot or Dutch oven, cook the kielbasa over medium heat until lightly browned, about 5 minutes. Drain off any fat and set the sausage aside.
- 2
Simmer the vegetables
Peel and cube the potatoes; slice the celery rib and the carrot. In the same pot, combine the potatoes, frozen corn, chicken broth, celery, carrot, garlic powder, onion powder, salt and pepper, scraping up any browned bits from the bottom. Bring to a boil, then reduce the heat, cover, and simmer until the vegetables are tender, about 15 minutes.

Finish with milk and cheese
Stir in the milk, shredded cheddar cheese, minced parsley and the browned kielbasa. Cook and stir over low heat until the cheese is melted and the soup is heated through, about 5 minutes. Keep the heat gentle once the dairy goes in so the soup stays smooth and doesn't break.
