Brown the beef
Cook and crumble the ground beef in an 8-quart stockpot or Dutch oven over medium heat until no longer pink, 5–7 minutes. Drain the fat.

Add everything else
Slice the kielbasa into half-rounds. Halve and thinly slice the onions. Seed and slice the banana peppers. Mince the garlic. Rinse and drain the beans. Stir all remaining ingredients into the pot with the beef and combine well.

Simmer
Bring to a boil, then reduce heat. Cover and simmer for 1 hour, stirring occasionally. Let rest a few minutes off heat before serving — it's very hot straight from the pot.

Ingredients
- 3 lb ground beef
- 56 oz diced tomatoes
- 64 oz kidney beans
- 1 lb smoked kielbasa
- 2 onions
- 16 oz tomato sauce
- 2/3 cup barbecue sauce
- 1 1/2 cup water
- 1/2 cup brown sugar
- 5 banana peppers
- 2 tbsp chili powder
- 2 tsp ground mustard
- 2 tsp instant coffee granules
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp dried sage
- 1/2 tsp cayenne pepper
- 1/2 tsp crushed red pepper flakes
- 2 garlic cloves

Notes & Tips
This is a legitimately huge batch — 6 quarts, 24 servings. Make it once and you're eating well all week. Fridge life: 4–5 days in an airtight container. Freezer: 2–3 months in freezer-safe containers, freeze in individual or family-sized portions depending on how you'll use it. The instant coffee sounds strange but don't skip it — it deepens the flavor without tasting like coffee. Start with 1/2 tsp cayenne and taste before adding more. This one gets better on day two.
