Heat the oven
Preheat the oven to 350F and coat an 11x7-inch baking dish with cooking spray.

Mix the dry ingredients
In a large bowl, combine the oats, baking powder, cinnamon, salt, and nutmeg.

Whisk the wet ingredients
In a separate bowl, whisk together the eggs, milk, maple syrup, oil, and vanilla until blended. Stir the wet mixture into the dry mixture and let stand 5 minutes so the oats start to soak.

Peel if you like, then chop the apple into small pieces and fold it into the oat mixture.

Transfer the mixture to the prepared baking dish and sprinkle the sunflower seeds over the top. Bake uncovered until set and the edges are lightly browned, about 25-30 minutes. Let cool slightly before portioning.

- 1 apple
- 1/4 cup sunflower seeds
