    Melt the butter

    Get a big skillet over medium heat and melt the butter until it's fully liquid and smelling good.

    Start the onion

    Thinly slice the quarter onion and toss it in with the salt and pepper. Cook about 2 minutes, stirring here and there.

    Bring the garlic

    Mince the garlic, add it to the pan, and cook 3 more minutes, stirring often, until it's fragrant and the onion turns translucent. This is where the magic happens.

    Lime it up

    Zest 1 lime and juice half of another, then add both to the pan. Cook 2 minutes so all that citrus melts into the butter.

    Cook the shrimp

    Crank the heat to medium-high and add the peeled, deveined shrimp. Cook 3 to 4 minutes, flipping halfway, until they turn pink and are just cooked through. Don't walk away here, shrimp go from perfect to rubbery fast.

    Serve it hot

    Pull the pan off the heat, chop the cilantro and shower it over the top, and serve right away over rice, in warm tortillas, or on a crispy tostada.
