Marinate the steak
Whisk together the juice of both limes, olive oil, cumin, oregano, minced garlic, salt, and pepper. Pour it over the flank steak in a resealable bag and let it soak up all that goodness for at least 1 hour — overnight is even better if you've got the time.

Grill it up
Pull the steak out 15 minutes before cooking so it isn't fridge-cold. Heat a grill or grill pan to about 400F with a little oil. Cook 4 to 5 minutes per side for medium-rare (130-135F), a couple minutes longer if you like it more done. Let it rest, then chop into small bite-size pieces.

Smash the avocado
Scoop the avocado into a bowl, hit it with a pinch of salt, and mash until smooth and creamy. This is the glue that holds the whole torta together.

Build your torta
Slice the bolillo rolls in half. Smear one side with mayo and the other with mashed avocado. Pile on the chopped carne asada, then top with shredded lettuce, sliced tomato, onion, cilantro, and jalapeno. Cap it off and squeeze it down. That's the one.
