Mash the avocados
Halve, pit, and scoop two ripe avocados into a big bowl. Squeeze in the lime juice and coarsely mash with a fork. Keep it chunky for that restaurant-style texture, or keep going until it's smooth if that's more your speed.

Prep the mix-ins
Seed and finely chop the tomato and the jalapeno, finely chop the red onion, chop the cilantro, and mince the garlic clove. The finer the chop, the better everything folds in.
- 3
Fold it all together
Stir the tomato, red onion, cilantro, jalapeno, garlic, and salt into the mashed avocado. Taste it. If it feels flat, it almost always needs another pinch of salt or another squeeze of lime. Don't be shy.

Serve it fresh
Dig in right away with chips or spoon it straight onto tacos. If you're holding it for later, press plastic wrap directly onto the surface (or float a thin layer of water on top) so it stays green.
