    Make the marinade

    In a small bowl, mix together the chili powder, salt, garlic powder, coriander, onion powder, cumin, and cayenne. Whisk in the vegetable oil until you've got a smooth, fragrant marinade.

    Marinate the steak

    Place the flank steak in a shallow dish or zip-top bag. Pour the marinade over it, turning to coat both sides. Let it sit at room temperature for at least 15 minutes — or up to 2 hours in the fridge if you've got time.

    Grill the steak

    Heat a grill or cast iron skillet over medium-high heat. Cook the flank steak for 5–7 minutes per side, until it reaches your preferred doneness. Flank steak is best at medium — don't overdo it or it toughens up.

    Rest and slice

    Transfer the steak to a cutting board and let it rest for 5 minutes. This keeps the juices in. Slice thinly against the grain — this is the key to tender flank steak tacos.

    Build your tacos

    Pile the sliced steak onto warm corn tortillas. Top with diced onion, fresh cilantro, and a big squeeze of lime. Add guacamole if you've got it. Serve immediately.
