Get the good stuff going
Melt the butter in a saucepan over medium-high heat. Add 1 chopped onion and 2 minced garlic cloves and saute until soft and tender. Stir in the green chiles and let them cook, stirring, for 5 minutes so everything gets friendly.

Drop the heat to low. Add the shredded cheddar and Monterey Jack a handful at a time, letting each addition fully melt before adding more.
