    Heat the oven

    Preheat your oven to 350°F. Grab a 10-inch cast-iron skillet — this is the move. You're going from stovetop to oven in the same pan, which means fewer dishes and maximum vibes.

    Cook the chorizo mixture

    Crumble the chorizo into your skillet and add the corn, chopped red onion, and chopped poblano pepper. Cook over medium heat, stirring occasionally, until the chorizo is fully cooked and the veggies have softened, about 6 to 8 minutes. Drain off any excess fat.

    Add the cheese

    Stir in the crumbled goat cheese, cubed Monterey Jack, and cubed pepper jack. Mix it all in so the cheese is distributed throughout the chorizo mixture — don't overthink it, just get it in there.
