    Prep and season the salmon

    Preheat your broiler. Rub each salmon fillet with about 1/2 teaspoon of olive oil (2 teaspoons total) and sprinkle all over with paprika, salt, and pepper. Place on a greased rack of a broiler pan.

    Broil the salmon

    Broil 5–6 inches from the heat for 6–8 minutes, or until the fish just begins to flake easily with a fork. Don't overcook — salmon is best when it still has a little give in the center.

    Cook the beans and spinach

    While the salmon broils, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and cook for 15–30 seconds until fragrant. Add the rinsed cannellini beans, a pinch of salt, and pepper, stirring to coat them in the garlicky oil. Add the spinach and stir until wilted, about 2–3 minutes.

    Serve

    Plate each salmon fillet over a generous scoop of the white bean and spinach mixture. Serve immediately with lemon wedges for squeezing over the top.
