Saute the vegetables
In a large saucepan, heat the olive oil over medium heat. Add the sliced mushrooms, chopped carrot and chopped onion. Cook and stir for 5 to 6 minutes, until the vegetables are tender and the mushrooms have released their moisture.

Simmer the barley
Add the water and quick-cooking barley. Bring to a boil, then reduce the heat and simmer, uncovered, for 12 to 15 minutes, until the barley is tender and chewy.

Make it creamy
In a small bowl, whisk the flour, whole milk, salt and pepper until smooth. Stir this into the soup and return to a boil, stirring constantly. Cook and stir for 1 to 2 minutes, until thick and creamy.

Finish and serve
Ladle into bowls and, if you like, top with chopped fresh parsley and a little extra cracked pepper. Serve warm with crusty bread.

- 1 cup mushrooms

- 3/4 cup barley
- 2 tbsp all-purpose flour
- 3 cup whole milk
- 1 1/2 tsp salt
- 1/2 tsp black pepper
- fresh parsley
